Bright and refreshing, this classic cocktail uses our homemade, aerated citrus juice. Though we call for pisco (an unaged brandy), feel free to use any liquor you prefer.
1.5 ounces (44 ml) pisco
1.5 ounces (44 ml) citrus juice
0.75 ounces (22 ml) simple syrup
1 egg whites
1 cups (100 g) ice cubes
Place all ingredients in the blender container in the order listed and secure the lid.
Start machine, and run for 15 seconds.
Remove lid and pour equally into 3 glasses, straining ice as needed.
Add extra ice if desired.
Notes A pisco sour is traditionally served without ice, but this cocktail can be served either way. The Aer™ disccontainer combines the ingredients, foams the egg whites, and chills the cocktail all at the same time. To make the cocktail vegan, aquafaba (chickpea liquid) may be substituted for the egg whites.
